Minnie’s dried soup mix (dried vegetable mix)
The soup mix contains raw, dried zucchini, carrots, onions, tomatoes, celery, coriander leaves, parsley leaves, thyme, and nothing else.
1- Making soup:
- Prepare 4 cups of the stock that you like (vegetable, chicken or meat or Minnies stock below)
- Bring to simmer
- Add ¼ of the box of dried soup mix (yes just a quarter of the box, not more), simmer for 10 minutes
- Add vermicelli, rice, oats, pearl barley or any other small pasta, simmer for 10 more minutes
- Season with salt and pepper
- Turn off, cover, and let stand for another 10 minutes
- Serve
2- Making vegetable stock:
- Measure 4 cups of water
- Add 1 teaspoon salt and some pepper
- Add 3 Minnies bay leaf, 2 or 3 pods of cardamom, ¼ teaspoon turmeric, ¼ teaspoon ginger powder (or 1 tablespoon fresh ginger cut up)
- Add 1/3 of the box of the dried soup mix
- Bring to boil, cover and simmer for an hour
- Strain and use broth for cooking
3- Flavoring sauces and such:
Add a tablespoon or two of this dried soup mix:
- to tomato sauce for pasta, lasagna or moussaka.
- to vegetable soup
- to rice while cooking it.
- to salad dressing
- to salad itself
- to marinate chicken, fish or meat
- to make a Spanish omelette: add a tablespoon to eggs, beat and cook in butter
4- Quinoa with beet water and Minnies Soup Mix:
- 1 cup of Dandarawi quinoa soaked for a couple of hours and washed a couple of times under running water
- 1 cup of beet water obtained from boiling beets
- 1 cup of water
- 1 tablespoon of Minnies dried soup mix
- Sea salt and pepper freshly ground, to taste
- 1 tablespoon of coconut oil or extra virgin olive oil
- In a pot, put the coconut oil, the quinoa, drained and stir a little bit.
- Add the liquids (beet water and water)
- Add salt & pepper.
- Bring to a boil
- Add Minnies dried soup mix and turn the heat down, cover pot and simmer for about 20 minutes checking every once in a while to make sure there is enough liquid and quinoa is cooking. You may need to add more liquid, so keep some hot water at hand to add if needed.
- Turn heat off
- Let stand for 5 minutes
- Serve with pickled beets that you just cooked.
